行政主厨 Terumitsu Saito,生于日本冈山,2007年踏足法兰西前,已淬炼于故乡米其林星级殿堂。味觉修行始于拉罗谢尔,随法国最佳手工艺者奖得主 Johan Leclerre 精进厨艺。后入传奇主厨 Guy Martin 的巴黎圣殿 Le Grand Véfour。辗转文华东方期间,先与 Thierry Marx 共塑料理哲学,再执掌Blue Valentine小馆,持续征服饕客味蕾。创作根植法餐精髓,融汇旅途采撷的文化灵光。隐于贝多芬街的Ōrtensia,恰如夏乐宫畔私密珍宝。二十席空间里,以炽热匠心呈献精雕佳肴与臻选佳酿。在此邂逅天赋的全部——每道菜肴皆味觉的精密诗篇,细微处绽现烹饪魔法星芒。
Chef Terumitsu Saito, originally from Okayama, Japan, made a stopover in France in 2007, after proving himself in several Michelin-starred establishments in his native country.
His culinary adventure began in La Rochelle, where he perfected his art alongside chef and Meilleur Ouvrier de France, Johan Leclerre. He later joined the ranks of Guy Martin at Le Grand Véfour. In Paris, Terumitsu Saito continues to delight discerning palates, deploying his talent at the Mandarin Oriental, first alongside Thierry Marx, then taking the reins of the Blue Valentine bistro.
Chef Terumitsu Saito's cuisine, inspired by French excellence, is enriched by multiple influences accumulated during his travels and culinary experiences.
Tucked away on Rue Beethoven, Ōrtensia is an intimate jewel of a twenty-seat restaurant, nestled a stone's throw from the Trocadero, where Chef Terumitsu Saito invites haute gastronomie enthusiasts to discover meticulously crafted dishes and carefully selected wines with unbridled passion.

许正源,18岁前往日本果子学校学习甜品 ,毕业后来到法国雷诺特学院进修法餐。
2019年加入巴黎米其林一星餐厅Pilgrim ,结识了Chef斋藤照允 。
2019年底 , 味蕾相近、理念契合的两人达成共识并决定—同开创新店。
2023年在法国摘得米其林一星后,于2024年回到上海,选址张园开设ŌRTENSIA上海店。
Chef Xu Zhengyuan, Went to a Japanese confectionery school to study desserts at the age of 18, and later came to France to further study French cuisine at the Lenotre Academy.
Joined Pilgrim Restaurant in 2019 and met Chef Terumitsu Saito.
At the end of 2019, the two, who shared similar tastes and philosophies, decided to open a new restaurant together.
After winning a Michelin star in France in 2023, he returned to Shanghai in 2024 and opened ŌRTENSIA Shanghai in Zhang Yuan .

Welcome to Ortensia Shanghai! We sincerely provide you with an excellent dining experience. To ensure that every guest can enjoy our carefully-designed delicious food,please be aware of the following dining notice.

Menu settings:We only offer set menu for now, all of which are carefully designed by our executive chef.
Guests at the same table are strongly suggested to choose the same set menu.

Service Fee:Prices are subject to 10% service fee.

Wine Policy:An additional service fee of 500 RMB per bottle(750ml) will be charged if you bring your own wine; Purchasing a bottle of wine from our restaurant over 500RMB could waive the service fee for one bottle of your own wine.

Special Diet Request:For special requests or food allergies, please inform us at least 48 hours in advance, we will do our best to accommodate where possible.We currently cannot receive the guests who are vegetarian, gluten-free and lactose-free. Thank you for your understanding.

Children's Reservation:Our restaurant currently does not provide baby chairs or utensils.If your children can independently and stably enjoy the set menu without disturbing other guests at other tables, they're welcomed.

* 订金收取:由于餐位有限,预订时需要您通过线上支付餐位订金。晚餐订金1000元/位,午餐订金300/位。预订成功后,您将收到短信确认通知。
* 修改和取消:于用餐当日,提前48小时可免费取消或免责修改您的预约。于用餐当日48小时以内,取消预约会被罚没50%订金,或者您可以选择在一个月内再次使用同等额度。(请注意,逾期未使用订金恕不退还。)暂不支持小程序端自助修改,线上可申请取消然后重新预订,或联系客服为您修改。更多详情请咨询客服。
* 发票获取:可通过扫描用餐结束后的票据二维码申请电子发票若票据丢失可致电我们寻求帮助。

Reservation Rules
We will open reservation for the next month around the 15th of each month.For example:Starting from 15th January, bookings for the entire month of February will be available, and so on. To ensure the experience and rights of each guest, please follow the following online booking rules.
* Deposit :Due to limited seating, a deposit of 1000RMB per guest for dinner or a deposit of 300RMB per guest for lunch is required while you're making the reservation.The deposit will be refunded by the original payment method after you and the customer arrive at our restaurant.After successful booking, you will receive a SMS confirmation notification.
* Cancellation Policy :If you cancel your reservation above 48 hours on the day of your booking, the deposit will be refunded 100%; If you cancel your reservation within 48 hours on the day of your booking, the deposit will be refunded 50%; If you cancel your reservation on the day of your booking: Sorry, the deposit cannot be refunded.Currently, self-service modification on the mini program of WeChat is not available. You can apply to cancel and then remake your booking.The restaurant will prepare ingredients based on the number of guests corresponding to your prepaid deposit. If there are any changes, please notify us 48 hours before the time of your reservation.
* Invoice-related Issues :You can apply for an electronic invoice by scanning the QR code provided by our service team member. If the ticket is lost, please feel free to contact us.
